2 c. Arborrio rice
4 tbsp. butter
1/4 c. olive oil
6-7 garlic cloves, crushed
1 med. onion, diced
1 bell pepper, diced
1 habenero pepper, chopped
1 c. fresh mushrooms, sliced
1/4 c, Slap Yo' Mamma spice
2 c. fresh pineapple, cut up
20 fresh asparagus spears, chopped into 1" - 1 1/2" lengths
1 package frozen peas, cooked
1 c, grated parmasean cheese
2 chicken breasts, chopped into 1" cubes
2 32 oz. boxes low-sodium chicken broth
salt

Prepare all ingredients prior to beginning recipe.

Lightly toast rice in pan over medium heat. In a stock pot, melt butter in olive oil over medium heat. Saute garlic, onions, green pepper, habanero pepper, mushrooms and Slap Yo' Mamma until onions turn opaque. Salt and pepper to taste. Add toasted rice to mixture. Turn heat to high. Add chicken. Add approximately 2 c. of chicken stock. Stir constantly until the mixture becomes a little dry, add more chicken stock to almost covering the rice. Continue stirring. After 10 minutes add pineapple, asparagus and peas. After 5 more minutes add Parmesan cheese. Continue stirring and adding chicken stock until rice becomes al dente, after about 20 minutes total time. Let sit for 3-4 minutes. Top with more Parmesan cheese and serve.
