5 pounds cooked potatoes (red skins work well, any will do)
1 Small jar green olives
1 Small jar sweet pickles
1 sweet white onion
6 peeled hard boiled eggs
Heilmans Mayo...NOT ANY OTHER BRAND
Salt and pepper to taste

The key to the best results is chop, chop and chop...potatoes, olives, pickle and onion....really small...so you get a little of everything in every bite!
I try to peel and chop potatoes when still warm, as it seems to absorb the
flavors and mayo best.
I cut the potatoes in very small pieces, slice the olives thin, chop the little pickles in small pieces, finely chop the onion ...and chop the hard boiled eggs small also.
The amount of Hellmans is up to you...I keep adding till I reach the consistency that I like.
Chill...but Don has been known to eat it as soon as I mix it up!!

My Potatoe Salad is a little different from most....I refer to it as a "sweet and sour" version. If made right....the chopping takes time.....you will be pleased with the results. I always make 5 pounds as it goes go fast.....
