1 pound thinly sliced boneless chicken.
2 eggs
1 cup flour
1 cup orange marmalade (Polaner brand)
3 oz. Mandarin Sauce
1/2- 1 tsp. crushed red pepper
Cooking oil

Directions:
Directions:
Heat oil in fry pan or fryer to 350º. Tenderize chicken with mallet until approximately 1/4" thick. Cut into 1 1/2" strips.

Beat eggs. Dip chicken into eggs, then coat with flour. Fry chicken in hot oil until golden brown. Drain on paper towel and set aside.

In large fry pan, combine marmalade and mandarin sauce, then sprinkle with crushed red pepper. Heat on very low heat until mixture thins out and starts to simmer. Add chicken to pan, making sure to coat all sides with sauce. Let stand in pan for 5 minutes.

Serve over white rice.
