3 whole chicken breast (or thinly sliced breasts)
1/2 cup seasoned dry bread crumbs
1/2 cup grated Parmesan cheese
1 large egg
1/3 cup olive oil
1 jar spaghetti sauce
1 pkg. sliced mozzarella cheese
3 cups hot cooked pasta

Directions:
Directions:
Preheat oven to 350º. In a shallow bowl, combine bread crumbs and 1/4 cup Parmesan cheese. Place egg in another shallow bowl and beat thoroughly. Dip chicken pieces into egg, then dip in crumb mix, coating thoroughly.

In large skillet, heat 1/4 cup olive oil over med-high heat until hot. Add chicken pieces and saute 5 minutes on each side, until browned.

Pour spaghetti sauce into 13 x 9 pan. Arrange chicken in pan. Cover loosely with foil. Bake 40 minutes (less for thinly sliced chicken).

Remove foil and top chicken with mozzarella, sprinkle with Parmesan cheese. Bake an additional 10 minutes until browned. Toss pasta with olive oil and parsley. Arrange chicken around pasta.
