4 tbsp butter
3 tbsp olive oil
1 small onion, chopped
1/2 cup chopped mushrooms
1/2 pound sea scallops, chopped
1/2 pound small peeled and deveined shrimp, coarsely chopped
1 1/2 tsp Old Bay Seasoning
1 3/4 cups Ritz cracker crumbs (1 1/4 sleeves)
Salt and pepper
8 thin haddock (2 lbs. total)
2 tbsp. melted butter
lemon wedges

Directions:
In large skillet, heat butter and oil. Add onion and mushrooms. Cook over medium heat until soft and lightly browned, about 6 minutes. Add scallops and shrimp and Old Bay seasoning. Cook stirring until seafood is just cooked through, 3-4 minutes. Remove from heat.

Add Ritz cracker crumbs, season to taste with salt and pepper.

Preheat oven to 400º. Brush individual dishes generously with melted butter. Season fillets on both sides with salt and pepper. Place fillet in dish, cover with stuffing, pressing to make even layer. Roll fillets and secure with toothpick. Brush fish with melted butter. Sprinkle top with paprika.

Bake until fish is opaque in it's thickest part and stuffing is heated through. About 20-30 minutes.
