1 C melted shortening
1 C brown sugar firmly packed
1 C sugar
2 eggs
1 tsp vanilla
1 C sifted flour
1 tsp baking soda
1/4 tsp salt
1 C flaked coconut
2 C quick cooking oats

Directions:
Directions:
Combine shortening and sugars; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla.
Sift together flour, baking soda & salt. Gradually add dry ingredients to creamed mixture; mix well. Stir in coconut and oats. Shape dough in 1" balls. Place balls about 2" apart on greased baking sheets.
Bake in 325º oven for 12 minutes or until golden brown. Remove from baking sheets; cool on racks.
