1 1/2 C flour
3/4 C brown sugar
1/2 tsp baking soda
1/2 tsp salt
1/3 C vegetable oil
1 egg
1/2 C buttermilk
1 tsp vanilla
1 C rhubarb chopped
1/2 C chopped nuts
Topping: 1/4 C dark brown sugar, 1/4 C chopped nuts, 1/2 tsp cinnamon

Directions:
Directions:
In a large bowl combine flour, sugar, baking soda, & salt. Combine oil, egg, buttermilk & vanilla. Stir into dry ingredients just until moistened. Fold in rhubarb and nuts. Fill greased or paper lined muffin cups 2/3 full. combine topping ingredients sprinkle over muffins. Bake at 375º for 20-25 minutes. Cool 10 minutes before removing from pan to wire rack.
