3/4 cup shredded mozzarella cheese
1/4 cup butter
1 1/2 cups Vidalia or white onion
8 oz. beef tenderloin or sirloin, cut into 1/8 inch slices
1 tsp. flour
1 tsp. brown sugar
1/2 tsp. cumin
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup beef broth
1 8 oz. can of crescent roll dough

Directions:
Preheat oven to 375º. Cook onion in butter, till brown and caramelized, about 15 - 20 minutes. With slotted spoon, remove onion to bowl. Add beef to pan and cook 2-3 minutes, until browned. Return onions to pan and add flour, brown sugar, cumin, salt and pepper and beef broth. Cook and stir 5 minutes or until almost all liquid is absorbed. Grease cookie sheet. Separate dough into 8 triangles. Slightly overlap long sides of 2 triangles to make one larger triangle. Do the same with the rest to make 4 large triangles. Place triangles in a row on the cookie sheet, overlapping, points up - think Christmas tree. Spoon meat mixture down the center, beginning and ending one inch from each end. Sprinkle cheese over meat mixture. bring side points over filling, crossing one over the over, making a braided appearance. Seal ends. Bake at 375º for 15 to 20 minutes or until deep golden brown. Serve with hot au jus for dipping.
