4 lb boned and rolled pot roast
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1/4 tsp. garlic salt
1/4 tsp. marjoram
1/8 tsp. oregano
1/2 cup red wine
1 tbsp. A-1 Sauce
2 small onions
1 bay leaf
2 stalks celery
2 carrots

Directions:

Mix all dry ingredients and sprinkle over roast, rubbing in well with fingers. Brown roast in 2 tbsp. olive oil. When browned add liquid ingredients. Add onions, bay leaf, celery and carrots.

Cover and cook over low heat about 3 hours or cook in pressure cooker for 40 minutes. Let pressure drop of it's own accord. (May need extra water in pressure cooker).

Remove meat to platter. Put pan liquid including vegetable through sieve. Blend in two tbsp flour. Add water to pan liquid to make 3 cups. If necessary thicken gravy with flour. Add salt and pepper.
