Directions:
Directions:
Wash, stem and quarter apples to fill a 5 gallon pail. No need to peel or remove seeds. Cover with boiling brine made of 9-10 quarts water and 1 tsp. cream of tartar for each quart of water. Cover with weighted plate and let soak for 48 hours. Stir twice a day. Strain and pour into a canner. Bring to boil. Add sugar to taste (4-5 cups)until dissolved. Pour into hot jars and seal.
