3 Russet Potatoes
250 g Bacon, diced, cooked until chewy
250 g Extra Sharp Cheddar Cheese (Tillamook preferred)
1/2 C Green Onions - chopped
1 C Sour Cream

Directions:
Directions:
1. Wash and prick potatoes. Bake for 1 hour at 400º. Let cool.
2. Slice potatoes lengthwise in half, then slice each half, in half again lengthwise. You should have 12 potato wedge like looking quarters.
3. Scoop out almost all of the potato, leaving a thin layer of potato on the skin.
4. Place potato pieces on a rimmed baking sheet and bake at 450º for 12 minutes, or until crisp.
5. Remove and fill each potato wedge with cheddar cheese and bacon pieces.
6. Return to oven and bake again, until cheese melts.
7. Serve with sour cream for dipping.
