1 cup shortening
2 cups sugar
2 eggs, well beaten
1/2 cup dark molasses
3 tsp ground ginger
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
4 1/2 cups flour

Directions:
Directions:
Cream shortening and sugar; add eggs and molasses; beat well. Stir in dry ingredients. Mold dough into shaped rolls; wrap and chill thoroughly. Slice chilled dough 1/8 -1/4" thick as desired using a sharp knife. Place slices on ungreased cookie sheet. Bake at 350º for 6-8 minutes. Cool. Frost with Fluffy White Frosting (from Cakes and Frostings) on underside of cookie. Store in air-tight container after frosting is dry.
