3-4 boneless, skinless chicken breasts
Course salt and pepper
1 cup barbecue sauce
1 and 1/3 cups shredded Monterey Jack or cheddar cheese
1/2 cup fresh diced tomatoes
3-4 slices applewood smoked bacon

Directions:
Directions:
An hour or two befor cooking pound out the chicken between two pieces of plastic wrap to an even thickness. Season with salt and pepper and place in a large bowl- cover with barbeque sauce and marinate in refrigerator.

Preheat oven to 400º. Bake the chicken until cooked to an internal temp of 165-175º.

Remove chicken from the oven, turn on the broiler and sprinkle the cheese over the chicken. Place under the broiler until chess is melted- about 2 minutes.

To serve, garnish with the tomatoes and bacon (crumbled or in slices),
