"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
2 cups white sugar
1 cup corn syrup
1/2 cup water
1 cup butter
3 cups peanuts
1 tsp baking soda

Directions:
Directions:
In a medium saucepan, combine sugar, corn syrup and water. Cook over medium heat, stirring until sugar dissolves. Bring to a boil; blend in butter. Begin to stir frequently when syrup reaches the thread stage, about 230º. When temperature is 280º or soft-crack stage, add peanuts. Stir constantly until hard-crack stage, or 300º is reached. Remove from heat and quickly stir in baking soda. Mix well, foaming will occur. Pour into two buttered cookie sheets. As the peanut brittle cools, stretch it out thinner if needed, by lifting and pulling at edges with forks. Loosen from the pan as soon as possible and turn over. Break hardened candy up and store in an airtight container.
