Ingredients: 1 ripe avocado per person, so 8 avocados for an 8 person party lemon or lime juice chili powder or Louisiana Hot Sauce: pronounced Loozana garlic cloves and salt Optional: finely chopped green onions, finely chopped cilantro, chopped tomato

Directions:Okie dokie, the only direction I give you is to cut the fruit in half, taking the seed out with the knife blade. You may want to save a couple of seeds if you know you'll have to prepare this more than 30 minutes ahead of serving time so that you may embed them in the finished guacamole to lessen the browning of the avocado. Scoop out each half with a spoon and then mash them all up with a fork. The rest of the ingredients you add to taste. For a time I thought lime juice superior but on a visit home I saw my dad use lemon juice, and since then I'm pretty partial to lemon. It's a win-win either freakin' way. You must use at least 3 little sections of garlic thoroughly mashed by a press or knife. The salt cannot be left out as it brings all the flavors together at the end. I like to cover the bowl tightly with plastic wrap and put it in the freezer for a little under 30 minutes. This may be a Texas thing. I like my guacamole ice cold with that ice cold Tecate beer. I would argue that chilling brings all the flavors together. |
