1 cup butter (2 sticks)
2 cups sugar
1 egg
1 cup canned pumpkin
1 tsp vanilla extract
3 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
2 cups white chocolate (11-12 oz bag)

Directions:

1. Preheat oven to 350º.

2. With an electric mixer, beat together softened butter and sugar until fluffy. Beat in egg, pumpkin, and vanilla extract.

3. Stir in flour, baking soda, cinnamon, nutmeg, and salt. Add white chocolate chips.

4. Drop spoonfuls 2 inches apart on a parchment lined baking sheet.

5. Bake 10 minutes, turn pan in oven, and bake another 10 minutes. Transfer parchment paper to a cooling rack to cool.
