white potatoes
sweet white onion
butter
flour
milk
salt and pepper
Optional cheese

Amounts vary depending on size of casserole you need to make.

I usually peel and slice potatoes.
Layer the potatoes and lightly salt between layers.

In a saucepan melt butter, add chopped onions and cook until onions are just soft.

Add flour to make a rue, adding milk to thicken.
Add salt and pepper to taste.

If you want to add cheese, add now and stir to melt.

Pour over sliced potatoes and bake in the oven at 350 degrees for at least 1 hr.

You need to adjust amounts based on the amount of potatoes you are making. I've made this in an electric roaster for parties and that works well also.

This is the way Mom taught me to make scalloped potatoes...the cooking time can be longer if you are making a large amount...as we did!
