½ cup seasoned bread crumbs
5 tbsp. Parmesan
2 tsp. oregano
Salt and pepper to taste
Tofu
2 tbsp. oil
8 oz. tomato sauce
½ tsp. basil
1 clove of garlic
4 oz. mozzarella

Directions:
Directions:
Combine bread crumbs, Parmesan cheese, 1 tsp. oregano, salt, pepper.

Slice tofu into ¼ inch slices and place in cold water; one at a time press tofu into crumb mixture. Cook tofu in oil until crisp.

Combine tomato sauce, garlic, basil, oregano and place a thin layer in 8 in. baking pan. Arrange tofu in pan, cover with remaining sauce and mozzarella. Bake 400ºF for 20 minutes.
