1 lb ready-to-cook gnocchi

1 lb bulk Italian sausage (as hot as you like it, but hot sausage is FABULOUS in this! You can use links, but remove the sausage from the casings)

1 8-oz carton fresh mushrooms, washed and sliced

6 ounces fresh washed spinach (you can also substitute baby kale, Swiss chard, or other dark leafy greens that can handle being cooked a little)

2 tsp olive oil

Heat a pan with the olive oil and brown the sausage and the mushrooms. While that is cooking, prepare gnocchi according to the package directions, and drain, reserving ½ cup of the liquid from the gnocchi.

Put your spinach into a large bowl, set aside.

Add the liquid to the sausage-mushroom mixture and continue to cook until the liquid thickens slightly.

Remove it from the heat and add the mixture to the spinach, tossing it well so that the heat from the sausage mixture cooks the spinach slightly. Serve over gnocchi.
