• 2 tablespoons butter
• 2 cups milk, divided (you can use any dairy you want – milk, half & half, heavy cream – it really just depends on how clogged you want your arteries to be!)
• 1 teaspoon cornstarch
• 1 clove garlic, pressed (2 if they’re small)
• 4 to 5 ounces fresh-grated Parmesan cheese (you don’t want the stuff in the green can, because the additive it contains to make it shelf-stable also keeps it from melting)
• Salt and pepper to taste

Melt butter in a saucepan on medium heat. Add 1 cup of milk and slowly bring it to a simmer. Combine the other cup of milk with the cornstarch. When the milk in the pot simmers, add the cornstarch-milk to thicken it. Add garlic, Parmesan, salt and pepper to taste.

We are a family that turns up our noses at spaghetti sauce that ISN’T homemade… but when the recipe calls for Alfredo sauce, we’re reaching for a jar. No more! The leftovers can be frozen… assuming you HAVE any!
