1 large onion, chopped
1 (14 oz.) can artichokes, drained & cut up
2 (10 oz.) packages chopped spinach (found in the frozen food section)
1 pint (16 oz.) tub sour cream
½ cup (1 stick) margarine or butter
1 cup Parmesan cheese - fresh shredded cheese
2 tsp salt

Cook spinach & drain. Saute onion in butter. Mix all remaining ingredients together, then fold in spinach & onion.

Pour into buttered casserole dish (I spray it with Pam). I usually sprinkle a little more cheese on top before putting in the oven.

Bake at 350 degrees for 25 minutes.

FYI, the original recipe calls for ½ cup Parmesan cheese, but I probably use 1 cup or a little more. So far no one has complained yet that it was too cheesy!!
