4 ears of sweet corn, cut in half (makes a flat base and makes it easier to remove corn) and kernels sliced off with a knife
½ a red bell pepper, diced
½ onion or equivalent diced scallions
Torn basil leaves to taste

Directions:
Directions:
Add a few tablespoons of butter to a skillet over medium heat and add the peppers and onions. Add a pinch or 2 of salt and pepper. Cook until softened, about 4-5 minutes. Add the corn and a little more salt and pepper. Stir and cook about 8-10 minuets over medium low heat. Add the basil to taste and check for seasoning. Serve.
