2 1/2 cups Ore-Ida Steam n' Mash potatoes (divided use)
2 1/4 cups whole milk (divided use)
1/2 cup chicken stock
1 (1.8oz) pkg Knorr Leek Recipe Mix
1/2 cup cream
3 sliced scallions (optional)
1oz Velveeta cheese, cut in cubes (optional)
Sliced chives, diced cooked bacon, grated cheddar cheese (optional garnishes)

Directions:
Directions:
Put 1/2 cup thawed potatoes in a glass bowl and add 3/4 cup milk. Microwave on high for 2 to 2 1/2 minutes. Using a fork, mash the potatoes.
Place the remaining milk and chicken broth in a medium saucepan. Add the soup mix and stir to dissolve. Place over medium-high heat and bring to a simmer, stirring constantly.
Add the remaining potatoes, reduce the heat and stir in the cream. If adding scallions and Velveeta, add them now. Coo for several minutes or until the potatoes are hot.
Serve the soup garnished with chives, bacon, and cheddar cheese.
