2 lb corned beef brisket with seasoning packet
1 large head of cabbage, cut into wedges
1 lb. package baby carrots
4 - 5 large russet potatoes

Directions:
Directions:
Place beef in Dutch oven. Add enough cold water just to cover beef. Add seasoning packet.Heat to boiling, reduce heat to low. Cover and simmer 2 hours. Add carrots and potatoes to broth. Cover and simmer 20 - 30 minutes. Remove beef to platter and cover with aluminum foil. Add cabbage to broth. Heat to boiling; reduce heat to low. Simmer uncovered about 15 - 30 minutes or until vegetables are tender. Serve vegetables with beef.

I made this for Dad every St. Patrick's Day. Dad and I loved it. Mom would only eat it if I made it with canned corned beef so I made a special pot for her using the canned corned beef.
