1 can each:
diced tomatoes
black beans
kidney beans
great northern beans
medium black olives
corn nibblets
1 1/2 cup frozen crinkle carrots
1 small onion, coarsely chopped
1 1/2 tsp chopped garlic
1 tsp salt
1/4 tsp black pepper
2 Tbsp chili powder

Directions:
Directions:
Add tomatoes to crock pot. Drain and rinse all beans, the olives and the corn, adding them to the crock pot when done. Add all other ingredients and stir well.
Cook on low setting for 6-8 hours or on high 3-4 hours. Serve with Fritos Scoops!

This is a mild version. To add extra "kick" you can substitute the unflavored diced tomatoes with one that adds pepper or green chilis, etc. and add a tsp of cumin.

This is the vegetarian version, which we love, but you can also add a pound of browned ground beef or turkey.
