About a 1 inch thick piece of good quality steak such as bone in rib eye or bone in New York Strip
Cast Iron Pan
Kosher salt and Pepper to taste
1 tablespoon of vegetable oil

Directions:
Remove the steaks from the fridge about 45 min before you plan to cook them so they get closer to room temperature. Dry them well and season aggressively with salt and a little pepper.
Turn the heat to high on a burner and put a cast iron skillet over it. Let the pan get blazing hot, about 6-8 minutes.
Turn on vent.
Add oil to skillet and then the steaks. Cook for a few minutes on each side. Exact cooking time really depends on the thickness. Poke the steaks a little to get an idea of doneness throughout. The goal is medium rare and underdone is better than overdone. Allow cooked steaks to rest for about 5-7 minutes before slicing into. Serve.
***For Steak Au Poive crack a bunch of black peppercorns into large chunks on a plate and lay the steak on top pressing down a little bit. Turn over and do the same thing to the other side. Cook the same way as a regular steak. Remove and make the pan sauce while allowing the steak to rest. Lower heat to medium low and remove any excess fat that you don’t want from pan. Add a tablespoon or two of butter to cast iron skillet and add some minced shallot or onion. Cook a minute or two while stirring to soften the onion/shallot. Add some brandy off heat and cook another minute. Add about ½ cup of beef broth and cook a couple minutes. Add a touch of cream and some fresh thyme to sauce and stir to combine. Spoon over rested steak and serve.
