2 pounds hot or sweet Italian sausage
2 large onions cut in half then sliced about ½ inch thick
2 bell peppers seeded and cut like the onion
Marinara sauce to taste, about 1 quart

Directions:
Directions:
Start frying the sausage with a little olive oil in a large skillet over medium heat until golden brown on 1 side, about 5 minutes. Turn over and repeat. Remove to a cutting board
Throw in the onion, peppers, a pinch or so of salt and pepper and cook while stirring until totally softened and just starting to brown.
While peppers and onions are cooking, cut the sausage into roughly 1 inch sized pieces. It doesn’t matter if they aren’t totally cooked through because they will cook in the sauce.
Add the sausage back to the skillet and add the tomato sauce. Bring to a simmer and cook for about 20 minutes to combine flavors. Serve.
