South Carolina Potato Salad Recipe

4 lbs red potatoes
5 hard-cooked eggs
1 c mayonnaise (regular or light)
1 tbsp spicy brown mustard
1 1/2 tsp salt
3/4 tsp pepper

Directions:
Directions:
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. Peel potatoes (or leave skin on), and cut into 1-inch cubes. Grate eggs on the largest hole of a grater. Stir together potatoes and eggs. Stir together mayonnaise, mustard, salt and pepper; gently stir the mixture into the potatoes and eggs. Serve immediately, or cover and chill, if desired.

Variation: Potato Salad with Sweet Pickle
Add 1/3 cup sweet salad cube pickles to potato mixture.

You can also add 2 celery ribs, diced, and 1/2 small sweet onion, diced.
