1 1/2 C. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 C. sugar
1 beaten egg
1 C. crushed pineapple
1/4 C. melted butter
Topping:
1/2 C. coconut
1/2 C. brown sugar
2 T. flour
2 T. butter
Directions:
Directions:
Mix flour, baking powder, salt, and sugar together. Add the egg, pineapple, and melted butter. Stir just until mixed.
Pour into greased approximately 6x10 or 9x9 in. pan.
Topping: Mix together coconut, brown sugar, 2 T. flour, and 2 T. butter and sprinkle over cake mixture. Bake 400º 25-35 min., depending on the pan used.
