About 1-2 pounds of super fresh, skinned, bloodline removed, and cleaned bluefish fillets
1 recipe All Purpose Bread Crumb Recipe (substituting ½ the bread crumbs for Panko bread crumbs)
Lemon juice, tarter sauce, or a hot sauce such as Hot Chili Oil on the side (optional)

Set the oven to 450 and place rack in top third position.
Lay the fish on a foil lined cookie sheet and season the top with All Purpose Seasoning or any dry seasoning you like. Bake the fish in the oven for 10-15 minutes (depending on filet size). Remove the fish and turn oven to broil. Place the Oreganata mixture to taste all over the fish and return it the oven under the broiler. Broil until golden brown on top. Watch carefully so the breadcrumbs don’t burn. Serve with optional garnishes.
*Substitute any fish you want for this recipe. Just adjust cooking time accordingly.
