1 1/4 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup skim milk
3 T Puritan oil
1 egg, well beaten
1/2 tsp vanilla
1 1/2 cups fresh or frozen blueberries
2 T sugar
1/2 tsp cinnamon
2 T pecans, chopped

Heat oven to 350 degrees. Oil 8x8" pan lightly. For batter: combine first 5 ingredients in medium bowl. Make a well in center. Combine milk, Puritan oil, egg, and vanilla. Add all at once to flour mixture. Stir until dry ingredients are moistened and liquid is evenly distributed. Pour batter into pan.
For topping: spread blueberries over top of batter. Combine sugar and cinnamon. Spoon over blueberries. Sprinkle with nuts.
Bake at 350 degrees for 40 minutes or until wooden pick inserted in center comes out clean.
