Ingredients:  
1 pound of chopped collard greens that have been washed and cleaned, bottom inch or so cut off
1 onion diced
3 cloves of garlic, minced
2 pieces of bacon, chopped
½ teaspoon of salt
¼ teaspoon of black pepper
Cayenne pepper to taste (optional)
2 tablespoons of white wine vinegar
½ tablespoon molasses
½ cup or so of beer

Directions:
Directions:
Sauté the bacon in a Dutch oven for a few minutes until fat is rendered. Add the onion and cook a few minutes. Add the garlic, salt, pepper, cayenne, and cook another minute or so. Add the greens and toss all around. Add the vinegar, beer, molasses, and cook covered for about 30 minutes on low. Remove lid and cook another 30 minutes on low heat. Taste and adjust if necessary. Serve.
*This recipe can obviously be doubled, tripled, etc.
