1 pound of spinach washed and cleaned
¼ pound of pancetta, diced
5 or 6 cloves of whole garlic cloves lightly smashed
Salt and pepper
2 tablespoons of olive oil

Directions:
Directions:
In a very large skillet or large Dutch oven, combine the pancetta and olive oil and turn heat to medium. Cook a few minutes until pancetta is beginning to crisp.
Add the garlic and cook a few more minutes while stirring with a wooden spoon or tongs.
Add the spinach and turn heat to high. Add a pinch or 2 of salt and pepper. Stir and cook about 2 minutes until spinach is wilted. Taste and re season if necessary. Drain some of the liquid if you like. Serve immediately.
