1 1/2 cup white vinegar
1/2 cup water
3/4 cup sugar
1 tbsp pickling salt
1 tsp pickling spice

Directions:
Directions:
Cook beets and pack in clean jars. Leave whole if you are using tiny beets. Otherwise slice them to desired thickness (I like them quite thick).
Bring brine to boil and pour over beets. Place lids on jar and tighten rings. Don't make them too tight.
Process in boiling water bath for 20 minutes. Cool and store in a cool dark place.
