1 lb. ground turkey
1 large onion chopped
2 tbsp. minced garlic
1 tbsp. soy sauce
1/4 c. hoisin sauce
2 tsp. bottled fresh ginger
1 tbsp. rice wine vinegar
2 tsp. Asian chili pepper sauce
1/4 c. creamy peanut butter
1 8oz. can water chestnuts chopped
1 bunch green onions
2 tsp. sesame oil
6 small carrots
16 Boston or butter lettuce leaves

Directions:
Directions:
Cook turkey in a large skillet. Add chopped onion and continue browning. Reduce heat stirring frequently and add garlic, soy sauce, hoisin sauce, ginger, vinegar, chili pepper sauce, and peanut butter. Add chopped water chestnuts, green onions, sesame oil, and slivered carrots. Scoop 1/2 cup mixture onto lettuce leaves and fold like a taco.
