½ pound of blanched until tender string beans, ends cut off and cut into ½ inch pieces
1 (15oz.) can of garbanzo beans, drained
1 (15oz.) can of kidney beans, drained
2 ribs of celery, diced
1-2 tablespoons of minced red onion
Salt and pepper to taste
Dressing: 3 tablespoons of apple cider vinegar, 2 tablespoons of canola oil, 1 heaping teaspoon of mustard, 1 tablespoon of honey, ¼ teaspoon of garlic, ¼ teaspoon of salt, ¼ teaspoon of pepper. Add all the ingredients into a large bowl and whisk together for a minute or so to combine. Add all the beans, celery, and onion, to the bowl with the dressing. Toss well and season with salt and pepper to taste. Refrigerate and serve.
