2 lbs Chicken Breast or tenders
3/4 lbs fettuccine or angel hair pasta
1 lb mushrooms, thickly sliced
1 small onion, finely chopped
3 cloves garlic, minced or pressed
3 and 1/2 cups half and half
Salt and Pepper

Directions:
1. Salt and pepper both sides of chicken breast. In a large skillet saute chicken until golden brown and cooked through.

2. Cut chicken into strips.

3. Cook your noodles of choice according to the package instructions.

4. In a large, deep skillet, saute onion for 1 minute or until soft. Add garlic and saute, stirring constantly. Reduce heat to medium. Add mushrooms, cover and saute 5 to 7 minutes, or until soft, stirring frequently.

5. Add half-n-half. Over medium/high heat, simmer the sauce for 5 minutes until it is just barely beginning to thicken . It will not coat the noodles very well when it is hot, but let it cool just a little and it will get much thicker. Season to taste. Add the chicken and season with more salt and pepper to taste. Add the cooked noodles and mix everything together.

This has been a frequent dish at my moms house. It also keeps on showing up on our table. She would make this pasta for us when we were kids and we were crazy about it. I always make too much so we can have it for few days.
