1 pound of green lentils
1 onion, celery rib, carrot, all diced
1 cup of Marinara sauce and 1 tomato cut into large dice or equivalent amount of canned diced tomatoes
1 tablespoon of mined garlic
2 quarts chicken broth, homemade or from a base, plus more depending on how you like it
Bay leaf
Red wine vinegar
Parmesan or Pecorino Romano rind (optional)

In a Dutch oven start sautéing the onion, celery, and carrot in a few tablespoons of olive oil over medium heat. Add a few pinches of salt. After vegetables are soft, add the garlic and cook another minute while stirring. Add lentils and stir. Reduce heat to medium low, cover, and sweat about 10 minutes.
Remove lid and add the tomatoes, chicken broth, bay leaf, and cheese rind. Bring to a boil and then lower heat to a simmer. Cook partially covered for about 40 minutes. Taste a lentil to make sure they are fully cooked. Blend half the lentils with an immersion blender or in a blender. Add a splash or two of the vinegar. Taste for seasoning and adjust at this point. Add some more broth or water if you like a thinner soup. Serve garnishing with parsley.
