6 cups of beef broth or a combination of beef and chicken broth
1 cup dry red wine
About 4 pounds of yellow onions cut in half and then sliced thin
Baguette slices cut into ½ rounds and toasted
Swiss cheese, gruyere cheese, or asiago cheese
2 tablespoons of butter
½ teaspoon salt

Directions:

Melt butter in a Dutch oven and start sautéing onions over medium heat. Add salt and continue to cook, while stirring, until onions are golden brown. About ½ hour.
Deglaze Dutch oven with red wine and stir until reduced to syrup.
Add broth and bring to a boil. Reduce heat and simmer for about 20 minutes.
Fill hot French soup crock pot until almost top and lay the toast point on top. Lay cheese on top of soup and place crock pot on a cookie sheet and place under broiler until cheese is bubbly and spotty brown.
