2 cups of all purpose flour
1 ¾ teaspoons of salt
2 cups of whole milk
4 eggs, beaten
Freshly grated Parmagiano Reggiano cheese
Munster or gruyere cheese as needed

Directions:
Directions:
Pre heat the popover (or muffin) tray in a 350 degree oven.
Mix the flour and salt in a medium size bowl. Heat the milk in a sauce pan to very warm but not boiling and add the eggs. Turn off the heat and whisk the milk/egg mixture. Whisk the milk/egg mixture together with the dry ingredients thoroughly.
Remove the hot popover tray and spray with cooking spray. Ladle the mixture about ¾ of the way up each popover cup and then top with the Munster/gruyere to taste and then Parmagiano Reggiano. Bake for 25 minutes. Turn tray around for even cooking and cook another 25 minutes. Serve.
