Ingredients: 3 ¼ cups of flour 1 2/3 cups water (I measure 2 cups and remove 1/3 cup with measuring cup) 1 ½ teaspoons table salt 1 ½ teaspoons of sugar 1 ½ teaspoons of yeast A pint of Marinara sauce. Sauce should not be thin and watery. I sometimes puree it with my immersion blender. ½ lb of mozz cheese sliced into rings or grated Pecorino Romano cheese to taste

Directions:Mix flour, water, and salt in Kitchen Aid for a couple minutes on medium speed. Scrape sides and bottom with rubber spatula to make sure every thing is mixed. Mix again for another minute or 2. Let rest 20 minutes. Add yeast and sugar and mix on medium for 10-12 minutes. Dough should be silky when done. Remove bowl from Kitchen Aid base. Add a little olive oil to mixing bowl and turn dough with rubber spatula until coated. Put a big plate on top to cover mixing bowl and let rest 2-3 hours. Add about 3 tablespoons olive oil to pizza pan and smear all around with rubber spatula until coated. Add risen dough to pan carefully and press down with wet/oiled fingertips to begin stretching dough to fit. Let rest 20-30 minutes. Turn oven to 450 and set rack in middle position. Repeat again to stretch to fit. Wait another 20-30 minutes. Dough needs to relax to stretch. After about 1-2 hours dough should stretch to cover pan totally. Crimp up up sides and corners. Poke holes all over dough with fork. Put into hot 450 degree oven for 15 minutes. Remove pizza and top with cheese. Then spoon over sauce to taste (may not need a whole pint). Then sprinkle grated cheese to taste. Add other toppings now if you want. Cook another 10-12 minutes and remove from oven. Cut with pizza wheel and serve. |
