1 pound ground beef
1 pound cavatelli or penne
2 tablespoons of olive oil
1 large onion diced
1 large carrot diced
1 bell pepper diced
4 cloves of garlic minced
1 cup of chicken broth or pasta water
2 cups fresh or frozen cooked corn kernels
¼ pound American, cheddar, or mozzarella cheese
Grated cheese to taste
Parsley or scallions for garnish
Salt, pepper, and paprika to taste

In a large skillet or Dutch oven, sauté onions, carrot, bell pepper, and a pinch or two of salt in olive oil over medium heat. Stir often until vegetables are sweated, about 5-8 minutes.
Add garlic and continue to stir another minute.
Add ground beef, salt, pepper, and paprika to taste. Break up meat with a wooden spoon and cook until it is no longer raw. Add corn and chicken broth and stir to combine.
Add pasta to boiling salted water and cook while beef mixture finishes and reduces slightly.
When pasta is al dente, strain and add to ground beef mixture while stirring to combine, about 1 minute. Add a little pasta water if it’s to dry.
Add cheese of choice off heat and stir to combine. Taste and adjust seasoning if you want. Add parsley and serve.
