4 cups high gluten flour or all purpose if you can’t find high gluten
1 ¾ cups water
2 teaspoons of salt
1 teaspoon yeast
Half an onion pureed in food processor then slowly caramelized with a pinch of salt until golden brown in butter

Directions:
Puree onion in food processor and remove onion with slotted spoon (leaving behind any onion juice). Cook onion as directed and reserve.
Without cleaning food processor, add flour, salt, yeast and start processing. Slowly drizzle water down into food processor through top. Process for about 2 or 3 minutes.
Place in a lightly greased bowl, cover, and let rise for about 2 hours.
On a big, clean kitchen surface, sprinkle surface with flour and have extra ready. Divide the dough into 12 pieces (Divide in half, then divide into 3rds, then divide each 3rd in half). Let each piece rise 3-4 more hours, covered with linen cloth.
After 2-3 hours of the rising period, place a baking stone onto the middle rack of your oven and turn on to 500. Allow to heat for 1 hour.
When ready to bake, press each dough ball into a flat pizza about 5 inches.
Then, pull center of dough out to edges making what looks like a little well. I sometimes pick up the dough and do that in the air. Place a little bit of onion mixture in center. Make 6 like that.
Take a piece of parchment paper about the size of the baking stone and place the 6 bialy’s on the parchment paper giving a little in between.
Place the parchment paper on a pizza wheel and carefully and quickly slide onto hot baking stone. Bake for about 10-12 minutes. Remove with pizza wheel and slide cooked bialys onto cooling rack. Continue with remaining 6 other bialys.
