Break up about a half a loaf of some Italian bread and add it to a food processor. Process the bread until you have crumbs. Remove and place in a big bowl. Throw in some parsley leaves, one or two garlic cloves chopped, and process for a couple of seconds until finely ground. Remove and add to bread crumbs in a bowl. Add about ¼ cup grated Pecorino Romano cheese. Add some black pepper and paprika. Add olive oil to mixture until mixture is damp and moist. Taste and adjust seasoning.
*This is a basic bread crumb mixture for baked clams, stuffed mushrooms, stuffed artichokes, Oreganata fish, or Utica greens.
**For plain bread crumbs lightly toast some bread and process until fine.
