Medium size rice paper
Blanched shrimp
Romaine lettuce
Sliced cucumber, lengthwise
Scallions, quartered
Cooked rice noodles
Mint or cilantro
1 batch of peanut sauce

Directions:
Directions:
Dip a rice paper into a shallow bowl with water for about 5 seconds. Drain and lay on a clean flat surface. Put some lettuce slightly below the middle. Then place the cooked rice noodles, cucumber slices, scallions, and mint/cilantro on top of the lettuce. Place about 2-3 shrimp (or cut them length wise if you like) in front of the lettuce and noodles. Start rolling the rice paper from the bottom up over the lettuce and noodles. Then fold in the sides toward the middle. Continue rolling the spring roll carefully but tightly until it is finished. Continue and make as many as you want.
*You can also boil some pork belly for about 40 minutes in some salted water. Allow it to cool and slice it very thinly. Place the pork slices in front of the lettuce and behind shrimp. Continue as directed.
