8 medium red and orange bell peppers
Olive oil to taste
Parsley to taste
Sliced garlic to taste
Salt and pepper to taste

Line a pizza sheet with tinfoil and turn oven to 500. Spray tinfoil with cooking spray. Set Rack to top 1/3 position.
Slice the very top and bottom of pepper off and reserve for another use. Slice open the pepper on one side and open up the pepper to one long strip. Discard the seeds and white pith. Continue with the remaining peppers the same way and cook for 15 minutes at 500. Turn on broiler and cook another 5 minutes or until blackened all over.
Quickly remove the peppers into a dish that has a lid and cover immediately. After 30 minutes of steaming remove the skins and slice peppers into strips. Put back into dish and season generously with the oil, salt, pepper, garlic, and parsley. Taste and adjust to liking. Serve or refrigerate.
