1 large onion
2 medium potatoes
2 large carrots or celery
1 lb ground beef
½ c rice
salt and pepper
1 can tomato soup
1 can boiling water

Directions:
Directions:
Peel and slice onion and spread over bottom of a casserole dish. Sprinkle with salt and pepper. Slice peeled potatoes and carrots over top of the onions, and sprinkle with salt and pepper. Sprinkle with rice. Pat ground beef over that layer and sprinkle with salt and pepper. Mix soup and water together. Pour over top. Make sure some of the soup goes underneath the ground beef. Bake covered at 350ºF for two hours, until vegetables are tender.
