2 inches of canola oil
2 dozen shucked oysters
1 cup cornstarch
1/4 cup cornmeal
¼ cup all purpose flour
½ teaspoon table salt
½ teaspoon ground black pepper
1 egg white beaten in a large mixing bowl

Directions:
Directions:
Mix together all dry ingredients and put in a wide shallow bowl.
Heat the oil to 350-375 degrees in a Dutch oven or equivalent.
Add oysters to egg white bowl and mix.
Carefully dredge 6 oysters in flour mixture coating them completely and put them on a plate.
Carefully lower them into the oil in different spots and cook for 1-1 ½ minutes.
When done take them out with a wire net and place them on paper towel lined plates. Season at this point if desired.
Allow oil to reach temperature again and repeat with remaining oysters.
