Buffalo Mussels Recipe

2 pounds of fresh mussels
4-6 cloves of garlic, sliced
4 scallions, chopped
1 cup of chicken broth
˝ cup Buffalo wing sauce
1 tablespoon unsalted butter or canola oil
Crumbled blue or goat cheese to taste

Directions:
Directions:
Sauté garlic with butter/canola oil in a medium sauce pot until light golden brown. Add ˝ of the scallions and cook another minute or so. Add the chicken broth and wing sauce. Turn heat to high and bring to a boil. Add the mussels and put on lid. Cook for 3-5 minutes or until all mussels have opened and are clinging to one side of the shell. Discard any that don’t open. Garnish with remaining scallions and cheese to taste. Serve with Easy Garlic Bread.
