2 dozen clams shucked and tendons severed, juice reserved
1 recipe Basic Seasoned Bread Crumbs
Olive oil for drizzling
White wine or water and reserved clam juice

Directions:
Directions:
Turn on broiler and set rack to 3-5 inches away from top of clams.
Place shucked clams on a baking dish large enough to hold 24 clams but not to much larger.
Put some bread crumb mixture on each clam with a normal sized spoon.
Put reserved clam juice and some wine or water around the clams.
Drizzle some good quality olive oil all over the clams. Its good if some olive oil goes into the wine/clam juice broth.
Broil for about 4-6 minutes until spotted brown all over. Watch carefully not to burn bread crumbs. Serve with lemon. Pan juice can be used for garnish or for soaking up with bread.
